Sun porridge

Sun porridge is easy and quick to make. Suitable as a small evening meal, breakfast or lunch. This porridge differs from velvet porridge, butter porridge or porridge with similar name, by having egg yolk in the porridge. The egg yolk gives a nice yellow colour, and hence the name. At the same time, the egg yolk gives the porridge a rounder and richer flavour.  This porridge is no lightweight meal, but tastes incredibly good.

 

Ingredients:

5 dl milk
35-40 g of butter
3 tablespoons spelt flour (finely sifted)
A pinch salt
1 egg yolk
2 tbs water

 

 

Directions: Sun porridge
  1. Melt butter in a thick-bottomed saucepan.
  2. Whisk flour until you get a smooth mixture. Dilute with the milk.
  3. Put in a pinch of salt and bring to a boil while constant stirring. Let the porridge simmer for 4-5 minutes so that the raw flour taste disappears.
  4. Pull the porridge of the heat. In a separate bowl, whisk the egg yolk in with the water. During quick whipping, mix the egg yolk into the porridge.

 

Tip: You can also add more flavour to the porridge. Vanilla sugar, cardamom or any other flavor you like may suit.

Sun porridge served: Immediately with sugar and cinnamon

Allergy: Gluten and lactose. Made gluten-free using fine gluten free flour. Similarly, easily made lactose-free by using lactose-free milk. High FODMAP is due to lactose in the milk. You can easily get a low FODMAP by making it lactose lactose-free. Its important then to use lactose-free milk based on cow’s milk.
