Cheddar potato soup

Cheddar potato soup is basically a typical American chowder. Chowder is a cross between soup and stew. This means that the soup must contain milk or cream, and then it must have a thickening. The origin of chowder is discussed, but is said to be English. It is a tasty, creamy and substantial soup. It is a soup with a lot of good vegetables, but it is still not a low-calorie soup. The recipe gives a generous dinner for 2 people.

 

Ingredients

50 g onion
60 g celery sticks
3-4 potatoes
2 carrots
5 dl water
¼ tsp pepper
1 tsp salt

 

175 g cheddar
5 dl whole milk
3 tablespoons spelled flour

 

150 g cooked ham

 

Cheddar potato soup directions
  1. Start peeling potatoes and carrots. Cut these into smaller cubes. Peel the onion and then cut it and celery into suitable pieces. It is important that you cut the pieces so that everything is cooked tender at the same time. Then put everything in a pot of water. Add salt and pepper. Bring to the boil, reduce the heat and simmer for 10-14 minutes until the potatoes and carrots are tender.
  2. While the vegetables are cooking, cut the ham into small cubes. Grate the cheddar with a grater. Then put flour in a new saucepan, dilute with milk while stirring so that there are no lumps. Bring the milk to a boil and simmer for 3-4 minutes.
  3. Pull aside, pour in cheddar, and stir it in until it has completely melted. When the vegetables are done cooking – pull aside. Now add the cheddar and the milk mixture to the vegetables. Stir until well blended. Then put in ham.

 

Cheddar potato soup served

Immediately and garnish with fresh herbs. The soup can also be served with a good bread.

 

Allergy: Gluten. Makes gluten-free easily by using gluten-free flour. Lactose. Make lactose-free by using lactose-free milk. Cheddar is a hard cheese if you buy good quality, and hence it should be less than one gram of lactose per 100 grams. It is therefore considered lactose reduced. High FODMAP is due to onions and celery.
