Caribbean corn porridge

Caribbean corn porridge is, as the name implies, a porridge that originates from the Caribbean islands. This is of course natural, since corn is grown there and is a staple food. You can find corn porridge in a number of other parts of the world, including the southern states of the USA, and in Italy. There is, however, a difference in Caribbean corn porridge, because it often contains coconut milk, as in this recipe. In this corn porridge you get a velvety soft texture, with a lovely hint of coconut. It is a hearty porridge so the recipe should hold 2 people.

 

Ingredients

1 dl fine polenta or cornmeal
1.5 dl coconut milk
About. 3.5 dl milk
4-6 teaspoons sugar (can be omitted if desired)
½ teaspoon vanilla sugar
½ teaspoon salt

 

Directions
  1. Put the polenta in a small bowl and add 1.5 dl milk. Mix this well and let it stand aside.
  2. Put coconut milk and the rest of the milk (2 dl) in a thick-bottomed saucepan.
  3. Add sugar, vanilla sugar and salt. Bring to the boil over medium heat, stirring constantly.
  4. When the milk boils, stir in the polenta mixture. Bring to the boil again and simmer for 5-6 minutes. Sometimes the porridge becomes too thick – then just you sprinkle with a little and a little milk, until you get a suitable consistency. Just be careful not to pour in too much milk at a time so that the porridge stops boiling.

 

Served: Immediately with a little knob of butter and sprinkle over a little cinnamon, if you like.

Allergy: Gluten free. Lactose-free if you use lactose-free milk. Low FODMAP. Coconut milk contains high FODMAP, but must tolerant a small amount as in this recipe pr. portion.
