Caribbean corn porridge
Caribbean corn porridge is, as the name implies, a porridge that originates from the Caribbean islands. This is of course natural, since corn is grown there and is a staple food. You can find corn porridge in a number of other parts of the world, including the southern states of the USA, and in Italy. There is, however, a difference in Caribbean corn porridge, because it often contains coconut milk, as in this recipe. In this corn porridge you get a velvety soft texture, with a lovely hint of coconut. It is a hearty porridge so the recipe should hold 2 people.

1.5 dl coconut milk
About. 3.5 dl milk
4-6 teaspoons sugar (can be omitted if desired)
½ teaspoon vanilla sugar
½ teaspoon salt
- Put the polenta in a small bowl and add 1.5 dl milk. Mix this well and let it stand aside.
- Put coconut milk and the rest of the milk (2 dl) in a thick-bottomed saucepan.
- Add sugar, vanilla sugar and salt. Bring to the boil over medium heat, stirring constantly.
- When the milk boils, stir in the polenta mixture. Bring to the boil again and simmer for 5-6 minutes.
